Afraid of Fish?

Cookery courses for those nervous about cooking fish

Tina Pemberton, chef/owner of The Café at Brovey Lair in Norfolk learned a lot of her skills in America, Asia and the Pacific Rim. The Good Food Guide, who awarded her Best Fish Restaurant in Britain, describes her interpretation of fusion cuisine as being seen at its best. Her style of cooking demands the freshest produce, robust herbs and spices and only the best ingredients. She’ll teach you the art of marrying spices, flavours, textures and colours to create a fusion of tastes, cooking fish and seafood to perfection, transforming food into exciting dinner party creations. With one day’s full tuition you’ll return home ready to wow friends and family with dishes they and you never thought possible; while a master class over two days will bring you close to professional status – that is how simple Tina seems to make it.

1. Morning with lunch - start 9.30. Prepare for a light lunch that might include marinated fish plates, stir fried seafood such as squid, green king prawns, scallops and crab cakes. During the meal Tina will offer critical assessment and a detailed analysis of the morning’s course. Lunch will include a light wine and minerals and depending on your rate of progress will be between 1 and 1.30pm

Cost: £225.00. Companion lunch (inc. wine) £45.00

2. Afternoon with dinner - start 2.30pm. Preparation and execution of 4 course dinner although the soup and dessert are optional. If the focus is on fish only, two separate dishes can be prepared and, at dinner, will include selected fine wines with each course. During the meal Tina will offer critical assessment and a detailed analysis of the afternoon’s course. Dinner will start around 7.30 with champagne at the restaurant’s bar and fine wines to accompany your meal.

Cost: £275.00. Companion dinner (inc. wine) £85.00

3. All day incorporating courses 1 and 2 – start

In order to fully enjoy the dinner following courses 1 and 2 we recommend you book into one of our beautiful garden suites accommodation. Breakfast is a surprise in itself. No full English fry-up here. You’ll enter the realms of exoticism as spicy Mexico joins with healthy California in what Brovey Lair calls the Tropical Cal/Mex breakfast. (see menu 7).

Cost: £425.00. Companion lunch and dinner as in 1 and 2 above.

Payment: A credit card guarantee is required on booking a course with or without accommodation. Participants will be asked to pay a 25% deposit refundable if cancellation is received over 72 hours ahead of course date. Cancellation under 72 hours will be charged at 50% of course cost and a total no-show will forfeit the whole course cost. On completion of the course you will receive a recipe folder and an achievement certificate signed by master-chef Tina Pemberton. Customised gift vouchers are available especially printed with whatever value you decide.
